Taizhou Morning Tea
A traditional menu of Taizhou Morning Tea consists of "one tea, three snacks and one noodle". The tea refers to a cup of tea and one bowl of hot kan-ssu (shredded tofu with broth). The three snacks refer to three kinds of famous breakfast dim sum such as steamed buns, steamed dumplings and Shaomai, a dumpling with sticky rice and various meats as stuffing. The one noodle is usually fish soup noodle.

There are five steps in eating morning tea. First, you drink the tea; second, some seasonal appetisers; third, the hot kan-ssu; fourth, the dim sum and fifth, the noodle soup.
Modern menus offer many variations of local delicacies, but the "three treasures of morning tea" remain the hot kan-ssu, the fish-soup noodle and the crab-roe steamed dumpling.
